Chocolate is made from cacao beans. There are three kinds of these:
Criollo - from Venezuela; the rarest cacao beans
Forastero - a hardier variety of cacao beans grown in more areas
Trinitario - a hybrid of Criollo and Forastero, first grown in Trinidad.
Chocolate can be made using a single type of cacao bean or a blend. If chocolate is from not just one bean but one specific batch of beans, it can be called "single origin chocolate" or "plantation chocolate". Many chocolate coinnoisseurs enjoy sampling these chocolates.
